Campari and Passionfruit Sorbet

4 servings


Ingredients:

1 cup water
198g sugar
15 passion fruits
1 (142g) wine glass Campari


Method:

  • Place the water and sugar in a pan, bring to the boil and simmer for 5 minutes. Remove from the heat and allow to cool for a while.
  • Halve the passion fruits and scoop out the flesh, seeds and juice using a spoon. Stir this up, you can pass it through a sieve to remove the seeds.
  • Mix the passion fruit with the Campari and sugar syrup in a plastic tub or earthenware dish and place in the freezer. Generally, sorbet takes 2 hours to set. Try to stir it around every ½ hour if you remember.
  • Serve on its own, with some seasonal fruit, or in a cone with some vanilla ice cream.

Christmas Punch

Ingredients:

1 (750ml) bottle light rum
1 oz. triple sec
2 cups orange juice
2/3 cup lemon juice
1 4 oz. jar maraschino cherries, with juice
1/2 cup sugar
1 orange, sliced into rounds
1 lemon, sliced into rounds
1 8oz. ) can pineapple chunks
1 liter carbonated water

Method:

In a punch bowl combine sugar, orange and lemon juice, stirring until sugar dissolves. Add cherries, triple sec, light rum, orange slices, lemon slices, and pineapple chunks.
Set for 1-2 hours to allow flavors to blend.

Add carbonated water and ice just before serving.
